This cheesy cauliflower is absolutely addicting. When I make it I usually end up doing a double batch and my family and I still
inevitably end up eating the entire two heads of cauliflower. It's that good. Not sure if it's the crunchy roasted texture of the cauliflower bites, or the awesome cheesy flavor that has you feeling so satisfied (but not sticky gooey cheesy where you know you will feel terrible afterwards). I stopped trying to figure out why it's so addicting and now just eat away, cuz the nutrients you get from this cruciferous wonder are HUGE!
1 large head of cauliflower (pref. organic)
*1-2Tb coconut oil (pref. org extra virgin)
1/3C cornmeal (organic d/t GMOs)
3Tb nutritional yeast
1/2tsp sea salt
1/2tsp garlic powder
Wash and cut cauliflower into bite sized pieces and place into a large bowl.
Drizzle coconut oil over pieces and stir gently to coat.
*Note: If you don't use oils, like me, then you can easily sprinkle a tablespoon or so of water onto the cauliflower instead of the oil.
In a small bowl, combine the remaining dry ingredients and stir well.
Sprinkle approximately 3/4 of the dry mixture onto the cauliflower and stir gently to coat.
Place coated cauliflower onto a parchment lined baking sheet.
Bake for approximately 15 minutes.
Pour remaining dry ingredients onto cauliflower, toss to coat one final time, and bake for another 15 minutes or until crisp and slightly browned.
Once done, take out of the oven, and allow to cool for several minutes before serving.
