Okay...I wanted to post this recipe because it is sooooo dang easy, and the result is a large batch of oatmeal you will have on hand for the week. I do this recipe literally almost every 5-6 days. Oatmeal is something we always have on hand, to eat for breakfast, and as a snack for any time
of the day. For those of you who do not own an Instant Pot I'd highly recommend. I'm not a gadgety type person, as I do not think we need all of the latest and greatest gadgets in the kitchen. There is something to be said about manually cutting, dicing, mixing, and stirring. It can be a form of meditation and bring a sense of calm. That said, I do think an Instant Pot comes in handy when you are on the go, and busy with work and family. It allows you to batch cook and prepare things in advanced so you have plenty of meals on hand for the week.

2C steel cut oats (I like to use Bobs Red Mill organic oats)
5C filtered water
1tsp pure vanilla
2-3Tb pure maple syrup (or honey if you prefer)
2Tb ground flax seeds
2Tb unsweetened coconut flakes (I like to use Let's Do Organic reduced fat)
NOTE: When I make myself a bowl of this oatmeal, I most often add toppings such as nuts, seeds, berries, bananas, or even cacao. Woah...if you have not had chocolate oatmeal before, I say you must absolutely try it. It is delicious!
