I created this dish on the spot because I wanted something ‘carby’ without the carbs. I had made cauliflower fried rice before but did
not have cauliflower on hand. So instead I used what I had in my fridge – broccoli! This dish is so easy to make and my whole family loves it. Well okay, maybe my son gets a little critical about it not being actual rice, but I promise – the taste is delicious!
Next, heat sesame oil in a large skillet and add the ginger and veggies; stir until slightly tender; add the crumbled broccoli, along with the tamari/soy sauce; cook until all ingredients are combined and tender – approx 5min.
Finally, add your egg/egg replacement directly into the veggie mix and toss mixture together until fully cooked.
That is it! Super easy. Super delicious.
