These roasted potatoes are one of my family's favorites. I can never seem to make enough. I start out with six potatoes and they are gone in a minute, so now I double the recipe to
have leftovers on hand.
Do not be afraid of the potatoes, please! Potatoes, especially the skin, are filled with a host of macro and micronutrients including potassium, B vitamins, amino acids and phytochemicals. It's what we put ON our potatoes that make it unhealthy. Dousing your potato with toxic oils, butter, creams and cheese sauces is where the claims of obesity, diabetes, cancer and other chronic diseases come into play. One thing to note though, when buying potatoes, it is best to buy organic if possible as these grow in the ground and we do not want our potatoes absorbing any pesticides, herbicides, or other GMO garbage. The best thing about this potato recipe is you don't have to use any oil. The potatoes themselves are so moist that the seasoning sticks to the potato on its own. They are incredibly easy to make, so in less then an hour you will have a whole stack of beautiful, tasty, homemade, satisfying, yummy taters. Enjoy! xx
