I have always found it quite challenging to find a gluten free store bought bread that wasn't filled with weak and poorly nutritious ingredients. Plus I have been taking a closer look at my carbohydrate intake and wanted to make some healthier choices in this regard. So I have been
experimenting and making my own healthy, nutritious, high in protein, gluten free flourless breads, and this one's the bomb! It is very dense and hearty - which I like. One slice is all you need in the morning for breakfast - along with a beautifully alkalizing green smoothie too that is ;-)
2C almond flour (I soak my almonds overnight, and then grind them up in a Vitamix blender until a flour is formed)
1Tb flax seeds
1Tb hemp seeds
1Tb chia seeds
2/3C arrowroot powder
1tsp baking soda
1/4 tsp sea salt
3 organic eggs
1tsp apple cider vinegar
1/4C almond milk (or other nut milk of your choice)
1/4C coconut oil
Preheat oven to 350 degrees farenheit
Combine all of your dry ingredients in a medium sized bowl; combine all of your wet ingredients into another bowl; make a well/hole in your dry ingredients and add the wet ingredients to the dry ingredients using a wooden spoon. Mix well until a dough ball forms.
Line your baking loaf tin with parchment paper and smooth out the dough into the loaf pan; bake in the oven for approximately 30-35min or until golden brown and a toothpick comes out clean from the center of the loaf; allow bread to cool on a cooling rack before eating. Simple. Easy. Enjoy!
