Craving something a little more hearty and sweet but don't want to grab junk that will make you feel tired and lethargic later? This Groovy Granola could be just the ticket! It is filled with yummy wholesome ingredients and is very easy to make. Plus it makes
your home smell so warm and comfy while it's baking in the oven. My kids know something's a brewin' when they walk through the front door after summer school!
If you would like to have your nuts more in pieces, place them in a food processor and very gently pulse for 3-5 seconds - set aside. In a large bowl, combine all dry ingredients - oats, nuts, raisins (or other dried fruit), pumpkin and/or sunflower seeds, and coconut chips. Gently toss all ingredients with a wooden spoon until well combined.
In a small saucepan gently heat coconut oil, brown rice syrup, cinnamon, and vanilla until coconut oil and brown rice syrup are thoroughly melted and ingredients are nicely combined.
Add wet ingredients to the dry ingredients and combine until thoroughly moistened (if too dry, you MAY need to add a bit more brown rice syrup, but don't over due it. A good amount of stirring will eventually get all of the ingredients mixed well enough. Be patient and enjoy the process!).
Next, spread your mixture onto a large baking sheet (preferably one with a lip so your granola mixture doesn't go sliding off onto the floor! If not, then feel free to use a couple of regular baking sheets).
Place in a preheated oven at 325 degrees fahrenheit for approximately 30 minutes. Watch closely and stir approximately every 10 minutes in order to allow even cooking. Granola is done when it looks golden brown all around. Let cool for approximately 10 minutes and then mix gently to break up large chunks.
This granola stays yummy fresh in any kind of sealed glass container. I like to store mine in the refrigerator for ultimate freshness. Enjoy!
