This hummus was such a hit with the family, my son literally ate a whole plate of raw vegetables with it. Super easy to make and so incredibly healthy - no added fillers like the
store bought kind.
1 1/2C cooked garbanzo beans (cooked fresh, soaked overnight, or canned - BPA free can please)
1/3C lemon or lime juice
1-2Tb Apple Cider Vinegar (optional)
1-2 garlic cloves
1/2C fresh cilantro leaves - moderately packed
1 jalapeño pepper
sea salt to taste
Place all ingredients in a blender and blend until smooth. If not completely smooth, then add water, 1Tb at a time, until a smooth consistency is reached. Serve with fresh veggies and/or healthy crackers (I like to make my own vegan/gluten free crackers using a dehydrator). Enjoy!
