Yummy Apple Blueberry Crumble (vegan, GF, no refined sugar)

This dish came together quite easily the other day when I was craving something warm and
filling for breakfast. I used apples and blueberries because it was what I had in the fridge, but you could use any fruit that suits your fancy. I would imagine a combination of mixed berries might be pretty fantastic!

Ingredients:
Crumble:
1C ground almonds (or store bought almond flour)
1C oatmeal (I used gluten free oats)
5Tb brown rice syrup
2Tb coconut oil
1tsp cinnamon
pinch of salt

Fruit combo:
2-3 apples - peeled and cubed
1C - blueberries
1Tb brown rice syrup
1tsp cinnamon
  • Combine crumble ingredients together, mix until moist. If too dry, add additional brown rice syrup and coconut oil, a little at a time until moist but not runny. Set aside.
  • In a small saucepan combine fruit ingredients and add 3-4Tb of water to cover the bottom of pan. Bring to a low simmer and cook until fruit is soft - approx 5-7min.
  • Scoop fruit into baking dish (I used a glass square 8x8" dish) and sprinkle the crumble over the fruit combo. Spread evenly.
  • Bake in a preheated 350 degree oven for approx 10-12min, or until lightly brown and bubbly. 
  • Take out of the oven. Let cool slightly. Enjoy! xx
