MANGO ALMOND SEED BITES

​These Mango Almond Seed Bites are so delicious and easy to make. Perfect for a quick pick me up snack. I love to make a bunch and store them in the freezer for my family to eat, as they please, throughout the hot summer days. These bites are so amazing due to the combination of
​fresh and dried fruits. My kids go crazy for them! Okay, I do too ;-). Be careful though, they can be seriously addicting and hard to eat just one. Continue to enjoy these beautiful days of summer!

Ingredients:
  • 1/2 C - Mango (may substitute any fresh fruit of your choice)
  • 3/4 C - Dried Dates
  • 1/2 C - Protein Powder ( I use Vega Vanilla - 1 packet)
  • 1/2 C - Pumpkin Seeds (or any seeds of your choice)
  • 1/4 C - Almonds (or any nut of your choice)
  • 1/4 tsp - Sea Salt
  • 1/4 C - Dried Tangerine Slices (or any dried fruit of your choice)
  • 1/2 tsp - Cinnamon
  • 1/4 C - Matcha ​

Place all ingredients into a food processor, pulse and mix until you get the consistency you desire (I like mine finely mixed, but some like it chunky with something to bite into!); once mixture is to your liking, scoop 1 rounded teaspoon and roll in your hand to make round sized bites; place each ball in a glass dish lined with parchment paper; place in the freezer for storage. These bites never get truly frozen due to the dates and dried fruit. Best to keep in a tightly sealed glass dish in the freezer. Enjoy!
