In the spirit of Valentine's Day I wanted to post a treat that was both healthy yet a bit indulgent. I also wanted it to be something you could make quickly and bring to work or any other gathering you planned for that day. Well I can honestly say, these Chocolate Almond Bites are THE BOMB! They are super easy to make - only takes a few minutes - and they taste sooooo indulgent. The mixture of chocolate and just a hint of almond butter make these bites completely addicting. Plus they are gluten free, oil free, and contain no processed sugars. I promise it will be hard to eat just one!
INGREDIENTS: 1/2C cashews 5 medjool dates 3Tb cacao powder 3Tb almond butter 2tsp pure vanilla extract 1/8tsp sea salt (just a pinch) 2Tb pure maple syrup coconut - finely ground for rolling (optional) DIRECTIONS: Combine all ingredients, except for the maple syrup and coconut, in a food processor. Pulse and/or blend on medium speed until all ingredients are finely ground and evenly combined. Add maple syrup 1Tb at a time, pulse and mix in between, until mixture just begins to form into a ball (this required 2Tb of maple syrup for me but depending on your measurements may take a bit more or a bit less). Scoop out mixture with a spoon, approximately 1Tb at a time, and roll into balls. If desired roll the balls in the coconut to cover, pressing down lightly if needed. Place rolled bites onto a parchment paper lined plate and place in the freezer to harden for approximately 15 minutes. Once firm, place bites in a freezer safe container (I use glass) and, for best results, continue to store in the freezer.
