This is a super easy salad to make and you can get very creative with the ingredients. The trick is to ‘massage’ the kale with the dressing so the enzymes break down making it easier
to digest. Several of my friends have asked for this recipe, so I thought it best to post. Enjoy!
Blend all of the dressing ingredients together and let sit for several minutes to merge flavors. Toss kale and veggies into a large bowl with dressing. Massage the kale with your clean hands until you can feel the kale getting tender (this may take a few minutes). Once sufficiently coated with dressing, season to taste with additional pepper if needed. Enjoy! xx
