Beautiful Kale Salad

This is a super easy salad to make and you can get very creative with the ingredients. The trick is to ‘massage’ the kale with the dressing so the enzymes break down making it easier
to digest. Several of my friends have asked for this recipe, so I thought it best to post. Enjoy!

Ingredients:
  • 3-4 handfuls of kale
  • 1 red pepper – sliced or diced – whichever you prefer
  • 10-12 mushroom sliced
  • 1/2 large cucumber or 2-3 small cucumbers sliced
  • 1 large avocado sliced
  • Handful of seeds – whichever you prefer (flax, hemp, sunflower, pumpkin etc.)
(Note: I usually use whichever veggies I have on hand. This is just an example. Use what you like and be creative!)

Dressing:
  • 1/4C red balsamic vinegar
  • 1/4tsp crushed garlic
  • 1tsp maple syrup
  • 1tsp lemon
  • 1TB Dijon mustard
  • Pinch of sea salt
  • Pepper to taste
(Note: I really make this dressing to taste and don’t measure the ingredients, so I am giving you an eyeball type measurement. You may need to tweak it to your preference)

Blend all of the dressing ingredients together and let sit for several minutes to merge flavors. Toss kale and veggies into a large bowl with dressing. Massage the kale with your clean hands until you can feel the kale getting tender (this may take a few minutes). Once sufficiently coated with dressing, season to taste with additional pepper if needed. Enjoy! xx
