Banana Oatmeal Bake

Now THIS is my newest go to breakfast. I have been making this dish for me and my guy for I think about a week straight. The great thing is, this is the basic recipe. From there you can modify
it however you see fit. I've added nuts, chocolate chips, and I have even turned it into a chocolate bake by adding cacao. You will love the ease of this recipe, and because its so quick, you can make  a fresh one everyday, so it will feel like you are eating a decadent breakfast treat every morning. Warm, soft, DELICIOUS!

INGREDIENTS:

2Tb ground flax seed
1C oatmeal flakes
2tsp baking powder
1tsp cinnamon
1/4tsp sea salt
1 ripe banana
2Tb peanut butter (or any other kind of nut butter - no extra oil or sugar added)
2Tb pure maple syrup
vegan chocolate chips (optional)

DIRECTIONS:
  • Preheat oven to 350 degrees Fahrenheit, and very lightly grease (with a vegan butter or spray) 2 small Ramekins, or something similar, that can be put into the oven.
  • In a small bowl, combine ground flax seed and  6Tb of water. Stir then set aside to thicken, about 5-10min.
  • Once the flax eggs have thickened, place all of the ingredients into a food processor and blend until very smooth (approx 1-2min).
  • If you are using the chocolate chips, remove the food processor blade and add the desired amount of chocolate chips (I added about 1/4C but you can easily use more) and fold them into the batter with a spatula.
  • Pour the batter evenly into the 2 Ramekins, and place in the oven for approx 20-24min or until browned and a toothpick comes out clean.
  • Take out of the oven. Let cool for approx. 10min.  and ENJOY!
